Tonight I made homemade veggie burgers (99.99999% of store bought ones have the glutens in them) with caramelized onions, french fries and ketchup/mayo dip. Delicious!
Last night's dinner was stuffed peppers-vegetarian style. Brown rice, TVP, mushrooms, carrots, garlic, etc. to finish up the ends of whatever was left in the fridge.
Dinner tonight was italian marinated tofu with mixed veggies topped with parmesan cheese. My only regret was that I didn't make extra for lunch tomorrow!
