Christmas Chow

Nothing says Christmas like fresh baked bread with pumpkin butter...be jealous, be very jealous. I'm off to sit in front of the fireplace with my cup of coffee and mid-day snack. Have a very Merry Christmas with much delicious food!

Cheesy rice and veggies

Dinner tonight was a cheesy rice and veggie mixture finished off with GF (gluten free) breadcrumbs in the oven. I needed to make something to last for dinner tonight and for Christmas Eve. Girlfriend's mom is making a vegetarian chili with TVP, unfortunately there is no frozen TVP that is gluten free. I love her mom and was NOT going to ask her reconstitute dried TVP and do all the prep work to make it ready for chili. SO, I'm just going to bring my cheesy rice and veggie leftovers...not a bad Christmas Eve dinner if I do say so myself!

Diet by choice and necessity

I chose over a decade ago to be a vegetarian simply because I didn't (and still don't) like the taste/texture of meat. I started a gluten free diet over four years ago when I was diagnosed with Celiac Disease. When people find out that I'm a vegetarian and gluten free the first thing out of their mouths is usually along the lines of, "What do you eat???" This blog is to enlighten. To show the world what I eat. I'd like to say it's not just rice but the reality is, it's mostly rice. At least it's in different forms including rice, rice flour, rice pasta, anyway you get the point.
